Mirchi Bajji Recipe: A Spicy and Crispy Indian Snack

Instructions for Making Mirchi Bajji:
- Wash and pat dry the green chillies.
- Make a slit along one side of each chili, keeping the stem intact.
- Deseed the chilies using a small knife or spoon. Be careful not to break the chilies.
- Optional: Stuff the chilies with a mixture of crushed ajwain, salt, and tamarind paste.
- In a large bowl, whisk together besan, corn flour (or rice flour), salt, ajwain, red chili powder (if using), turmeric powder, and baking soda.
- Gradually add water to the dry ingredients, whisking until you get a thick and lump-free batter. The batter should be thick enough to coat the back of a spoon.
- Add 2 tablespoons of oil to the batter and mix well.
- Heat oil for deep frying in a pan or kadai over medium heat.
- Dip each chili in the batter, making sure to coat it evenly.
- Carefully drop the coated chilies into the hot oil.
- Fry the bajjis for 2-3 minutes, or until they are golden brown and crispy.
- Drain the bajjis on paper towels.
- Serve hot with your favorite chutney or sauce.
Tips for Making Mirchi Bajji:
- Use fresh, firm green chillies for the best results.
- If you don’t like your bajjis too spicy, you can remove the seeds from the chillies before stuffing or frying them.
- Be careful not to overcrowd the pan when frying the bajjis. This will prevent them from crisping up properly.
- The batter should be thick enough to coat the back of a spoon. If it is too thin, the bajjis will be soggy.
- Adjust the amount of red chili powder to your taste.
