Pachi pulusu, also known as raw tamarind rasam, is a light and flavorful South Indian dish originating from the Telangana and Andhra regions.   1. Extract the tamarind pulp: Soak the raw tamarind in water for about 30 minutes. Squeeze the pulp to extract the juice, discarding the seeds and fiber.
  2. Temper the spices: Heat oil in a small pan. Add cumin seeds and mustard seeds. Once they splutter, add the green chilies and allow them to blister slightly.
  3. Sauté the onions: Add the chopped onions and sauté until translucent.
  4. Prepare the base: Add the extracted tamarind juice, turmeric powder, and jaggery to the pan. Season with salt and adjust water to achieve your desired consistency.
  5. Simmer and infuse: Bring the mixture to a boil, then reduce heat and simmer for 5-7 minutes. Allow the flavors to infuse.
  6. Finishing touches: Garnish with chopped coriander leaves and serve hot with steamed rice, roti, or as a side dish.

Tips:

  • You can adjust the spice level by adding more or fewer green chilies.
  • For a smoother texture, you can strain the pachi pulusu after simmering.
