  • 10 curry leaves
  • 1 teaspoon mustard seeds

Instructions:

  1. Heat the oil in a large pan over medium heat. Add the chicken and cook, stirring occasionally, until golden brown.
  2. Add the chili powder, coriander powder, turmeric powder, fenugreek powder, black peppercorns, and salt. Stir to combine and cook for 1 minute.
  3. Stir in the lemon juice, ginger-garlic paste, and curry leaves. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the chicken is cooked through.
  4. Stir in the mustard seeds and cook for 1 minute more.
  5. Remove from heat and let cool completely.
  6. Store in an airtight container in the refrigerator for up to 2 weeks.

Tips:

  • You can adjust the amount of chili powder to your liking. If you prefer a milder pickle, start with 1/4 cup and add more to taste.
  • For a smokier flavor, you can add 1 teaspoon of smoked paprika to the spice mix.
  • You can also use bone-in chicken for this recipe. Just be sure to cook it for a longer time, until the juices run clear.
  • Chicken pickle is best served at room temperature. Let it sit out for 30 minutes before serving.
