  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon garam masala
  • Salt to taste
  • 1/4 cup chopped cilantro

Instructions:

  1. To make the dough, combine the flour and salt in a large bowl. Stir in the oil and water until a dough forms. Knead the dough for 5 minutes, then cover it with plastic wrap and let it rest for 30 minutes.
  2. To make the filling, heat oil in a large pan over medium heat. Add the onion, ginger, and garlic and cook until softened. Add the mutton and cook until browned. Add the coriander, turmeric, cumin, cayenne pepper, and garam masala and cook for 1 minute more. Stir in the salt and cilantro.
  3. To assemble the samosas, roll out the dough on a lightly floured surface. Cut out 3-inch squares. Place a spoonful of the filling in the center of each square. Fold the dough over the filling to form a triangle. Seal the edges with water.
  4. Heat oil in a large pan or deep fryer to 350 degrees F (175 degrees C). Fry the samosas for 2-3 minutes, or until golden brown. Drain on paper towels.

Here are some additional tips for making mutton samosas:

  • Be sure to use a sharp knife to cut the dough, so that the edges are clean and the samosas seal properly.
  • Don’t overstuff the samosas, or they will burst open during frying.
  • If the oil is too hot, the samosas will burn on the outside before the filling is cooked through. If the oil is not hot enough, the samosas will be greasy.
  • Let the samosas cool slightly before serving, so that the filling is not too hot.

With a little practice, you’ll be able to make delicious and crispy mutton samosas at home that will impress your family and friends.
