brinjal bajji

Brinjal bajji, also known as brinjal pakora or eggplant fritters, is a South Indian classic that’s crispy on the outside and tender on the inside. This simple yet satisfying snack is perfect for any occasion, whether it’s a quick bite, a party appetizer, or even a light meal. So, get ready to tantalize your taste buds with this easy-to-make recipe!

Ingredients:

  • 2 large brinjals (eggplants)
  • 1 cup besan (chickpea flour)
  • 1/4 cup rice flour (optional)
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/4 teaspoon turmeric powder
  • 1/4 teaspoon coriander powder
  • 1/4 teaspoon cumin seeds
  • 1/4 teaspoon asafoetida (hing)
  • Pinch of baking soda
  • Salt to taste
  • Oil for deep frying
  • Chopped cilantro (coriander leaves) for garnish (optional)

Instructions:

  1. Wash and dry the brinjals. Cut them into thin slices (about 1/4 inch thick). To prevent browning, you can soak the slices in water for a few minutes.
  2. In a large bowl, whisk together the besan flour, rice flour (if using), red chili powder, turmeric powder, coriander powder, cumin seeds, asafoetida, baking soda, and salt. Gradually add water and whisk until you get a smooth, slightly thick batter, similar to dosa batter consistency.
  3. Heat oil in a deep frying pan or kadhai over medium-high heat. Dip each brinjal slice in the batter, ensuring it’s evenly coated.
  4. Gently slide the coated brinjals into the hot oil. Fry for 2-3 minutes per side, or until golden brown and crispy.
  5. Drain the bajjis on a paper towel to absorb excess oil.
  6. Garnish with chopped cilantro (optional) and serve hot with your favorite chutney or dipping sauce.

Tips:

  • For a spicier kick, add a chopped green chili to the batter.
  • If you don’t have rice flour, you can substitute it with all-purpose flour.
  • To enhance the crispiness, add a tablespoon of gram flour (besan) to the hot oil before frying.
  • Feel free to experiment with other vegetables like chopped onions, carrots, or bell peppers in the batter.
  • Leftover bajjis can be stored in an airtight container in the refrigerator for up to 2 days. Reheat them in a pan or oven before serving.

With its simple ingredients and easy preparation, brinjal bajji is a delightful way to satisfy your cravings. So, give this recipe a try and enjoy the crispy, flavorful goodness of homemade brinjal bajji!

Happy cooking!
